This quick and easy tropical salad tastes great with grilled chicken, on top of chick-peas or on a bed of kale. It’s fantastic as a left-over and would make a tasty work lunch!
The “Eat Your Vitamins Mango Avocado Salad” is a great immunity booster. You’ll get tons of Vitamin C, Vitamin A, Vitamin K, Vitamin B6, Potassium, Manganese, Folate, Niacin, Magnesium, and Omega 6.
BONUS: With all of these fresh and vibrant ingredients, you’ll notice this salad does not require a rich or sugary dressing!
- 1 diced Mango
- 1 diced Onion
- 2 diced Tomatoes
- 1/2 cup cooked Corn
- 1/3 cup minced Cilantro
- 1 1/2 cups diced Red Pepper
- 1 cup diced Avocado
- Juice of 2 Limes
- Salt and Piri Piri Spice to taste
- Dice and combine all Fruits, Veggies, and Cilantro
- Add Lime Juice
- Add Salt and Piri Piri Spice to taste
