Summer weather is here and I’m thrilled! Unfortunately I’ve been under the weather this weekend with some seasonal migraines and nausea. I’ve been trying to stay hydrated and looking for anything that seems appealing to eat and drink.
I was craving popsicles and smoothies, so I started experimenting in the kitchen with my Bullet (inspired by Sofia’s Avocado Smoothie!) I ended up whipping up this tasty summer drink to sip on the balcony, which reminded me of an Orange Julius! Bonus: you can sneak in some added veggies or protein if desired, without compromising the refreshing frothy taste of a summery treat.
This recipe would be great for kiddos, or anyone struggling with #adulting this weekend, like myself. It might make a nice base for some homemade popsicles too!
Ingredients
- 1/3 cup frozen mango
- 1 orange (scoop pulp, slice, or juice the orange if preferred)
- 1 tbsp vegan protein powder (optional)
- 2 tbsp coconut milk ice cream
- 1/4 cup water or almond milk
- 1/4 cup frozen riced cauliflower
Directions
Combine all and blend! I used my Magic Bullet and gave it a solid 60-seconds of blending, stirred and blended again.
