Today I’m in full prep mode for our upcoming trip to Algonquin Park! I was trying to think of something high in protein that’s quick and easy to make for us to pack on our hiking trip. Meatballs are perfect for eating on the go without utensils and they definitely still taste great cold. My husband is excited to put some in his sandwich for our lunch-time picnic! The flavour profile for these meatballs is Mediterranean and they can be made with a different ground meat if you’re not a big turkey fan. Recipe makes 35 large meatballs.
Ingredients
- 1 cup chopped Onion
- 1 cup chopped Tomatoes
- 1 cup chopped Feta
- 1/2 cup diced Parsley
- 2 Eggs
- 1/2 cup Bread Crumbs
- 1 tsp Garlic Powder
- 1 tsp Black Pepper
- 1 tsp Oregano
- 1/2 tsp Salt
- 1/2 tsp Mint
- 2 Packs Lean Ground Turkey
Directions
- Add all ingredients (other than ground turkey) and mix well
- Add ground turkey and combine mixture
- Make into meatballs
- Bake at 400 for 15 minutes, rotate and bake for another 10 minutes
- Broil High for a few minutes to crispen them up!
