I’ve always had a soft spot for cornbread. This recipe is quick and easy to make and the great thing is it’s not too sweet. You can dip it into savoury sauces or enjoy it on its own! I plan on taking it on our hike tomorrow as an additional snack option along with the meatballs.
Ingredients
- 1/2 cup melted Butter
- 2/3 cup Brown Sugar
- 2 Eggs
- 2 Tbsp Maple Syrup
- 1 cup Buttermilk
- 1/2 tsp Baking Soda
- 1 cup Cornmeal
- 1 cup Four
- 1/2 tsp Salt
Directions
- Preheat oven to 375
- Combine melted butter, sugar, eggs, and maple syrup and whisk well. I used the whisk attachment with my Kitchenaid mixer.
- Add the remaining ingredients and whisk for 1-2 minutes.
- Add mixture to greased pan
- Bake for 25-30 minutes or until a toothpick comes out clean from the center
- Enjoy!
