Double Chocolate Protein Zucchini Loaf

DSC01158

The magic ingredient, zucchini, makes this loaf extra moist! It’s decadent and rich with almost a brownie like consistency and sweet enough despite only having 1/2 cup of sugar.

The espresso powder really brings out the chocolate flavour and the white chocolate chips on top are the perfect finishing touch.

I’ve included two recipe variations one with added protein and one for a regular double chocolate zucchini loaf. Both taste great! Recipe makes 10 servings.

  4. Um, Y U M! I’m getting into ‘sneaking’ vegetables into baking and this sounds like the perfect opportunity to give it a go. I do have a question though: my stomach gets weird on normal flours, so would I be able to swap this to almond or oatmeal and get the same(ish) result?

    1. Hey, the texture would definitely be different but I think it could be close with oatmeal flour. Maybe you could use 1/2 cup less zuchinni so it doesn’t end up mushy.
